Harry chooses the best quality bone-in ham. He cures it in a secret marinade and to make it tender, the ham is smoked for up to 24 hours over his own blend of hardwood chips. What made his ham famous is the way the sweet glaze cracked and his patented machine that slice the ham continuously in a single spiral. It has been passed on to three generations of the Hoenselaar family and up to now, they still prepare the hams one by one and exactly the same way Harry did.
